    Your loaf pan is not just for baking bread – come on put it to good use and bake this decadent chocolate loaf cake!

    I craved something chocolaty but in cake and not cookie form. However I didn’t feel like the fuss of baking a chocolate layered cake that needed all the trimmings. Nor did I feel like baking chocolate cupcakes as it would require frosting and a simple chocolate muffin just wouldn’t do the trick.

    I wanted something that was easy to make but still decadent enough to satisfy my craving and this chocolate loaf cake was a real treat to tantalize my taste buds. It has a soft texture that is flavorful, moist and very delicious. Topped with chocolate chips and pecan nuts to give it that extra special finishing touch that adds more flavor and a bit of crunch.

    Note that loaf pans come in various sizes and types of material e.g. glass, silicone, ceramic and metal and they all distribute heat differently. There are also a few things to consider when selecting a loaf pan for baking bread or cake. For this recipe I used a standard size non-stick loaf pan. Although it’s non-stick, I still prefer lining my pan before filling it with batter.

    Decadent Chocolate Loaf Cake

    Cook Time 30 minutes

    Ingredients
      

    • cup cake flour
    • ½ cup cocoa powder
    • 1 cup sugar
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt
    • 1 xl egg
    • cup canola oil
    • 100 ml buttermilk
    • ½ tsp vanilla essence
    • ¾ cup chocolate chips (keep a ¼ cup one side for sprinkling on top)
    • ¼ cup raw pecan nuts (chopped)

    Instructions
     

    • Grease and line a 20cm loaf pan and preheat the oven to 180°C.
    • In a mixing bowl, sift the dry ingredients.
    • In a separate bowl whisk the egg, together with the oil and vanilla essence.
    • Add the oil and egg mixture to the dry ingredients then add the buttermilk. Mix through.
    • Add the chocolate chips and mix through.
    • Pour the batter in the lined loaf pan. Smooth it out and top with remaining chocolate chips and chopped pecan nuts.
    • Bake for 30 minutes until skewer comes out clean.
