    Homemade lemon curd is like liquid gold to me. It is deliciously creamy, zesty, tart and sweet.

    Lemon curd is the perfect dessert topping, filling, spread or just an eat-out-of-the-jar treat. This recipe is so easy and made with just 5 ingredients.

    Tips for making lemon curd

    • Only use fresh lemons.
    • Do not cook lemon curd directly on the stove. Always use a double-boiler method.
    • Make sure that you continuously whip the lemon curd to prevent the eggs from curdling.

    Lemon Curd

    Deliciously creamy, zesty and tart.
    Prep Time 5 minutes
    Cook Time 10 minutes
    Course Dessert
    Servings 2 cups

    Equipment

    • 1 Double boiler (DIY double boiler by using a pot and glass bowl)

    Ingredients
      

    • 4 large egg yolks
    • 1 cup granulated sugar
    • ½ cup fresh lemon juice
    • 1 tbsp lemon zest
    • 100 g salted butter

    Instructions
     

    • Fill the bottom pot of a double boiler with 30ml of water and place on medium heat until the water comes to a bowl. Then turn the heat down to low. If you do not have a double boiler use a pot and place a heat proof glass bowl on top.
    • Place the sugar, egg yolks, lemon juice and lemon zest in the top pot or heat proof glass bowl of the double boiler.
    • Continuously whisk the mixture while it cooks until it thickens.
    • Remove from heat, add the butter and whisk.
    • Pour the lemon curd into a clean bowl and place a piece of cling wrap on top to prevent a skin from forming on top.
    • The lemon curd will thicken up more whilst it cools.
    • Once completely cooled down; serve and enjoy.
